A full programme of exciting, entertaining and inspirational cookery demonstrations by celebrity and local chefs will take place throughout the weekend in our seated cookery theatre.

Jean-Christophe Novelli

Multi-Michelin star and 5/5 AA Rosette chef, author, teacher, public speaker and restaurateur Jean-Christophe Novelli is known around the globe for his amazing cooking artistry and unique healthy cooking techniques.

His passion for passing on his wealth of knowledge led him to open his own cookery school, The Novelli Academy, based in his personal kitchen at his Hertfordshire farmhouse. Shortly after opening, it was voted amongst the ‘Top 25 Cookery Schools in the World.’

Jean-Christophe has cooked and consulted on many projects, and has catered for Heads of State, Royalty and renowned personalities around the world. He has also been awarded an Honorary Doctor of Arts from Bedfordshire University for his 30 years of dedication to his craft and outstanding achievements in cooking, one of only three chefs ever to achieve this.

He has appeared in a number of television programmes including Hell’s Kitchen, The Jonathon Ross Show, and A League of their Own. Along with Gordon Ramsay, Jean-Christophe is back on UK television as one of the judges in the new show Culinary Genius.

Jo Wheatley

Jo Wheatley

Food writer and TV baker, Jo rose to fame as the winner of the second series of The Great British Bake Off.

Since then she has set up a cookery school which was listed in The Guardian’s Top Five UK Baking Schools, written two top-selling baking books, and appeared at numerous live food events across the UK, including BBC Good Food Show, The Cake and Bake Show, and Ideal Home Show.

Jo was voted second in a poll of Radio Times readers’ favourite ever Great British Bake Off contestants, and her successful blog, Jo’s Blue AGA, attracts a huge following.

She has worked as a recipe columnist for Sainsbury’s magazine and is a frequent contributor to various publications including The Sun, The Mirror, BBC Good Food Magazine, and Hello magazine.

Jo will deliver three baking demos on Saturday 16th September at 1.30am, 12.30pm and 2.30pm. In between demos she will be signing copies of her latest book, Home Baking.


Graham Tinsley MBE

Graham Tinsley MBE

Graham is the Executive Chef at the renowned Carden Park Hotel, Spa and Golf Resort in Cheshire, and heads up the North Wales Culinary Guild. He is always popular with our audiences and returns to the festival this year to showcase his culinary expertise.

Graham’s career as a chef began at the Midland Hotel in Manchester working under the guidance of renowned chef Gilbert Lefevre. After completing his apprenticeship and winning numerous culinary competition medals he furthered his knowledge at the five star Atlantis Sheraton in Zurich, Switzerland. Graham returned to England to work under Anton Mosimann at the prestigious Dorchester Hotel in London and later joined De Vere Hotels where he was selected to help develop and open St. David’s Park Hotel in Ewloe.

In 2006 Graham was awarded an MBE from the Queen for his services to the Welsh food industry. In the same year he received the Chairman’s Special Award from the Welsh Culinary Association in recognition of his contribution to the Hospitality Industry and Culinary Arts in Wales.

Kelvin Parry

Kelvin Parry

As Head Chef/Patron at The Dining Room at Llanrhaeadr Springs in the North Wales Clwydian Range, Kelvin has brought a new, inspired dining experience to the region.

Kelvin’s first job as a kitchen porter at the Dinorben Arms, Bodfari, aged 13, sparked an interest in cooking. After taking a cookery course at Llandrillo College, Kelvin continued his studies and achieved a BA Hons in Hospitality Management.

He then moved down to South Wales and worked at the Bell at Skenfrith, and later took up his first Head Chef position at Peterstone Court. Here, he attained 2 AA Rosettes and was awarded a Gold Award by the Welsh Tourist Board.

Returning to his roots, Kelvin joined the Michelin starred ‘Simon Radley’s @ The Chester Grosvenor’, who he describes as being his biggest inspiration, next to Ross Melling.

Kelvin’s next venture was working at ‘The Fine Dining Company’ in Tattenhall – his most diverse post to date. Often setting up a kitchen in guests’ homes to conduct private dinner parties and garden weddings, Kelvin gained vast experience of working in different catering environments.

Kelvin will be on the cookery theatre stage on Sunday 17th September at 2.40pm


Peter Rushworth

Peter Rushworth

Champion butcher and promoter of Welsh lamb, Peter, who works at Swan’s Farm Shop near Mold, has become well-known for his skills in crafting the very best cuts from premium Welsh meat.

Earlier this year, as part of the Meat Promotion Wales (HCC) delegation, Peter’s expertise were called upon when he was invited to attend the HOFEX trade and hospitality show in Hong Kong to promote Welsh meat and demonstrate his butchery skills.

For someone still so young, Peter already has numerous accolades to his name.  Last year he took the top spot in the national WorldSkills UK competition, and he was also the Welsh young butcher champion in 2014 and 2015.  Most recently, he was crowned Young Butcher of the Year at the Butcher’s Shop of the Year Awards in London.

Last summer Peter received a HCC scholarship to travel to the USA to find out how their red meat sector copes with the country’s demand.

Peter will give a butchery masterclass on Saturday 16th September at 3.30pm and expert chef Graham Tinsley will cook a variety of delicious dishes using the cuts of meat.


Tony Griffiths

Tony Griffiths

A highly experienced chef with over 25 years in the catering industry, Tony heads up the restaurant at the Crown Inn, Lixwm where he cooks ‘comfort food with passion.’

During his career, he has worked for various organisations and prestigious hotels in the area such as Molllington Banastre, Llyndir Hall, Crabwall Manor and The Queen Hotel, Chester.

He is also qualified to teach and has passed on the benefit of his extensive expertise to hundreds of catering students at Coleg Cambria.
