Jean-Christophe Novelli
Appearing on Sunday 25th September at 11:20am, 1:30pm and 3:35pm.
Jean-Christophe Novelli is a Michelin and 5AA Rosette award winning French chef. His Novelli Academy Cookery School, where he personally teaches most of the courses, is placed one of the top in the world.
He moved to the UK to run Keith Floyd’s Devon gastropub, the Maltster’s Arms in 1983. He worked at several other restaurants before founding London’s Maison Novelli in 1996.
Not one to shy away from the limelight, JC joined Gary Rhodes as competing head chefs on ITV1′s Hell’s Kitchen in 2005. He’s also teamed up with Aldo Zilli, Paul Rankin and Ross Burdenwith to form quartet The Chefs for The X Factor: Battle of the Stars.
Jean-Christophe Novelli will be doing three separate cookery demonstrations at Mold Food & Drink Festival on Sunday 25th September.

Brian Mellor
Appearing on Saturday 24th September at 10:30am, 12:30pm and 2:30pm.
Award winning Master Chef of Great Britain, Brian Mellor, will make his second visit to the Mold Food & Drink Festival on Saturday 24th September. Brian is widely recognized for his culinary expertise and regularly shares his knowledge and infectious enthusiasm with food festival audiences around the country.
Brian’s career has encompassed almost everything to do with food from cooking for private celebrity functions to managing teams of chefs in busy restaurants. Along the way he has studied to gain advanced qualifications, teaching certificates and several awards from professional bodies and the media. He was awarded with Master Craftsman status by the Craft Guild of Chefs.
Most recently Brian has been involved in developing the Brian Mellor Cookery School at Harthill. Renovating this old Victorian school whilst retaining its character and keeping its place at the heart of the community has been an amazing project and Brian’s vision of creating a place for learning, meeting artisans and discovering tastes is now becoming a firm reality. Courses with this Master Chef are designed to inspire and provide invaluable knowledge and techniques whilst covering all aspects of cookery from creating stunning starters to perfect pastries and petit-fours.
Graham Tinsley
Appearing on Saturday 24th September at 11:30am and 1:30pm.
Captain of the Welsh National Culinary Team, Graham Tinsley returns to centre stage in the Rangemaster Cookery Theatre on Saturday, 25th September.
Originally from St Helens, Lancashire Graham’s career in catering began at the Midland Hotel in Manchester under the guidance of renowned Chef Gilbert Lefevre. Following his apprenticeship and winning numerous culinary competition medals, he developed his knowledge of international cuisine at the five star Atlantis Sheraton in Zurich, Switzerland. On returning to England he worked under Anton Mosimann at the prestigious Dorchester Hotel in London followed by nine years with De Vere Hotels where, in 1991, he was selected to help develop and open St David’s Park Hotel in Ewloe .
Graham still retains co-ownership of the Castle Hotel in Conwy but recently returned as Executive Chef to the renowned Carden Park Hotel, Spa and Golf Resort in Cheshire, which he helped to develop and open back in 1997.
In 2006 Graham was awarded an MBE from the Queen for his services to the Welsh food industry and earlier this year he and the team were honoured to be commissioned to bake the wedding cake for William and Kate!
Continuing the royal connection, Graham and the team cooked for the Queen and Prince Charles in June this year at the fourth opening of the Welsh Assembly.
He proved to be a popular chef at the 2009 and 2010 Festival – we are more than pleased to welcome him back again in 2011!
Cordon Vert Chef Alex Connell
Appearing on Sunday 25th September at 2:30pm.
Alex Connell, Principal Tutor at the famous Cordon Vert School in Cheshire takes us through the best in vegetarian cooking.
The Cordon Vert School is the world’s premiere vegetarian cookery school and is part of the Vegetarian Society of the UK. Throughout the year they teach both members of the public and professionals the many aspects of vegetarian cookery through workshops hosted at their dedicated school in Altrincham, Cheshire.
Teen Cuisine 2011 Final
Taking place on Sunday 25th September at 10:30am.
Students from 6 Flintshire High Schools have recently turned their hands to cookery by attending the highly successful Teen Cuisine Master Class at Deeside College.
2 of the students have been whittled down from the attendees to battle it out in the greatly esteemed Teen Cuisine final. Who will be crowned Teen Cuisine 2011? Find out at this session!
